Ethan Jaffe is a co-founder and co-owner of Saje Kitchen, a restaurant focussing on Southern Style cuisine in Providence, Rhode Island. 

Saje Kitchen was scheduled to open in March 2020 when COVID-19 changed our way of life in the US. The Saje team adapted, prepared a safe environment for patrons, and persevered by opening to the public in August 2020. 

In our conversation, Ethan and I discuss navigating uncertainty, the power of food, and the importance of the customer experience.
